The latest installment in our collaboration series with Shacksbury Cider in Vermont, this hybrid-wunderkind began with a malt bill of pilsner, Vienna, Caravienne, wheat malt, unmalted wheat, and honey malt, which was then introduced to Vermont & Basque apples, cab franc grape skins, and some Cascade & aged Hersbrucker hops. Fermented with house cultures and aged in red wine & North American port barrels, it’s a gloriously complex and infinitely refreshing beverage replete with flavors & aromas of boysenberry, black currant, and raspberry tea, all culminating in a delightfully dry finish.
