We aged this uniquely delicious pils in heavy-toast oak foeders for 3 months before a generous dry-hopping with Perle. The result is a glorious marriage of floral character, oak, and subtle pine that’s both unique and infinitely quaffable.

Can from the Belmont Fermentorium.
A mildly hazy light orange with a large, off-white head with good retention and lacing, this looks solid. The nose is...strange. I can't tell if this is what the brewers were going for, but the dry hop character has a spice blend i would not associate with a pilsner. Think black cardamom, dried ginger, a little dried mango. A little elderflower with a little pine, perhaps? None of these scream Czech pils, and they do overpower the base pilsner. The palate has a floral, moderately woody (think wood extract like notes) and moderately spicy , with a noticeable dried ginger and mango taste, with a touch of smoke not unlike black cumin/black cardamom. The malt character is mild, and not particularly noticeable. The foeder aging does soften the palate some. Drying, mildly spicy on the finish, this beer is an odd duck.

Clear golden-yellow brew with plenty of white foam in the St. Bernardus globe. The aroma is so distinct and insistent, with every sip. It's flowery and woody, even a touch of mint. Green and peppery flavors. Just enough warm malt and a modest, well-balanced bitter edge in the aftertaste.
Delightful but unusual flavors for a Pilsner. This is definitely a winner in the lighter styles of beer, with a hoppy zing yet less of the overamped intensity we expect from IPAs. From the 16 oz can purchased at the brewery in San Diego.
