Double Barrel Barleywine aged in Cognac & Bovine Outline Bourbon Barrels.
This Barleywine-style ale was aged for 12 months in Bovine Outline Bourbon Barrels, then racked out into Cognac Barrels for 26 Months.
It ended up picking up a plethora of candied fruit and caramel notes – toffee, candied plums, and fruit sugars abound in this beer. It’s a truly excellent example of a Barleywine bringing the best of two different barrels to the table.

Poured at fridge temp. Pours a super thick black/dark brown with minimal head. The nose is amazing. Cognac dominates over the bourbon. Caramel, plums, raisins, blackberries,
The taste is extremely fruit forward. The cognac totally dominates on the taste. Raisins, cherries, light bourbon, toffee, and prunes.
Lovely mouthfeel. Medium bodied. The aftertaste is cognac all the way.

22 oz bomber into a snifter
Dark brown brew, not as sludgy as some of the other varieties. Big wafts of caramel and pecan on the nose, boozy for the ABV.
More grainy on the palate than its bouquet portends, as suggestions of whole grain bread undergird a sweet, caramelly profile. Plenty of vanilla and bourbon-y aspects, and quite sweet - maybe a bit too much. It overtakes some of the oaky balance that’s signature of an MT barrel-aged brew.

Sweet caramel and bran flake cereal malty, burnt sugar, a hint of dark fruits, and a prominent brown liquor boozy nose on this one! Taste follows with some sweet toffee and brown sugar, a hint of molasses, and a subdued cognac and bourbon barrel finish. More barrel on the nose than on the palate here IMO...so much so that it almost overwhelmed the aromatics. Pretty good mouthfeel...pretty good!
