Every year, we celebrate our anniversary with a special, limited-edition brew, and Now and Ten continues the tradition! The idea was to create a novel brew only made possible by the science of today; a beer that could serve as an Inspiration to our ten-year-younger selves. The result is a thiolized IPA that transcends space and time and lands us on an Island of tropical fruit aromas and vibrant notes of passionfruit, mango and blueberry. Cheers to decades past, present & future!

On tap at The Galaxy Restaurant in Wadsworth. Pours lighty hazy golden yellow color with a small dense white head with good retention and spotty soapy lacing on the glass. Aromas and flavors of big red grapefruit, tangerine, peach, pineapple, passionfruit, papaya, mango, melon, berries, citrus peel/rind, wood, peppercorn, pine, wheat, spicy rye, cracker, bread dough, herbal, floral, grass. Medium pine rind woody bitter finish. Medium carb and body. Fairly crisp clean finishing. Balanced bready grainy malt and sticky resinous hop mouthfeel. Long resinous drying finish with minimal hop astringency. Lupomax Amarillo, Incognito Citra, Lupomax Mosaic, Lupomax Citra, Citra Spectrum hops listed. Super vibrant and dank hop complexity with a very crisp dry west coast style finish. Always love citra/mosaic. Amazing hop showcase. Fantastic stuff.

This is a Thiolized IPA, named after the late Thio Simmons.
What is thiolization? Not even spellcheck knows for sure. The back of the 16oz can says it's a newer technique involving yeast. (And possibly a Stegosaurus?) What this means is...I don't know. The flavor is pretty generic as IPAs go. Fortunately, IPAs are one of the great inventions like penicillin and single-panel cartoons.

Pours golden and clean. Aroma is sickly sweet, berry. Upon the tongue, the feel is clean and crisp. Notes of apple and berry. Not overly exciting at first, but this grew on me with each sip. Well done for the style. Comparable to Sixth Sense’s Box of Rain. Good beer.
