Gift from someone that cares. 650ml bottle served at 10deg C in a tulip.

A- Opens well and pours no head at all. Expected from a beer cellared this long. Very dark brown colour and nearly black

S- Bourbon barrel galore

T- Chocolate and a bit on the bitter side of it. Nice change. Slightly fruity and deep cherry hints. Very complex. This one aged well. Raisins. Dark sugar notes. Nice brew

M- Creamy going down and dries out well

O- Nice brew. Too bad there are no more. Super complex now. Worth aging.

Food Pairing

This wonderful little brew went well with........ Pepper encrusted pork lion! Side it as you wish for a bourbon barrel aged stout such as collard greens or Swiss chard.

Poured in to snifter.

A - Poured deep black in colour with next to no head, aside from a few scattered bubbles. Carbonation appears very low.

S - Huge chocolate fudge and coconut notes up front. Toasted oak notes are present with only a touch of bourbon and vanilla noticeable. Fairly sweet nose.

T - Milk chocolate at first giving way to sweet maple syrup and coconut flavours. Very sweet overall with very little roast or bitterness providing balance. There's an odd soy sauce like flavour present, which detracts from the palate. Bourbon is barely noticeable and only a very light toasted oak presence comes through.

M - Medium body. Thin for the style. Very light carbonation.

O - A nice effort for a new brewery. I can see good things in their future.
