(Coriander, Sea Salt, Lactobacilius)
Milky dull brass with loose, fasting-fading off-white froth and steady streamers. 4
Lemon granata, crackery wheat, a whiff of the beach and maybe a touch of funk. 4
Snap wheat crackers, definite salt, some white vinegar, earthy herbs, and lots more lemon.
Spicy finish and salty linger. 3.75
Crisp, light, minerally. 4
First shot with this style, so not much to go on. I get the salt, and maybe some coriander; oddly, the lacto takes a back seat. More lemon than anything. Smoothness of the wheat and lively fizz make for curious interplay. Some funk comes out when it warms, but it’s not enough. More refreshing, easier, and less interesting than I expected. 4
