This is a traditionally brewed Swedish “Gotlandsdricka”. The real Viking beer. An indigenous beer style brewed since approx 700 AD on the island of Gotland in the Baltic Sea. Historically this beer has been brewed with smoked malts and Juniper branches. The smaller branches with the juniper needles and berries are heated in water (HLT) to 175 F. and a “Tea” is made and used in the mash and the sparge. This imparts flavor, saltiness and has antibacterial properties. The wort is hopped to 35 IBUs with German Noble hops and northern English Ale yeast is used.
