When the new Lemondrop hop was released, we knew we had to use it! It is amazing the amount of lemon flavor and aroma that emanates from this hop. We started with our base Saison that uses French Saison yeast and a limited amount of wheat, unlike other Saisons. This keeps the beer light and easy-drinking. We use just one hop in the initial brew, Mandarina Bavaria, which compliments the citrus from the Lemondrop hops nicely. Then, we dry-hop with tons of Lemondrop hops. Citrus is balanced out by a touch of hop bitterness and a nice dry finish.
