Black Creek is named after the two delicious fruits added to this beer. Black represents the blackberries added and Creek is a play on words to represent Kriek, the Belgian term for a barrel-aged cherry sour beer. It begins as two different beers, our Gabriel Belgian Blond Ale and our Window of Opportunity Belgian Tripel. They are then sent into their own wine barrels for six months. During aging, brettanomyces, lactobacillus, and heaps of blackberries and cherries are added to each barrel. Finally, the barrels are blended to transform these once traditional brews into one complex Wild Ale with bright fruit character, nice tartness, and a soft, dry finish.
