What do you do with an Apple Jack barrel? We asked ourselves that exact question when Dry Diggins, a great local distillery, offered us one of these unique barrels. In the end, we decided to fill it with our Belgian Tripel. Since we had never worked with this type of barrel before, we didn't know what to expect. Call it luck, call it talent, whatever it was, we couldn't be happier with what we ended up with. This barrel-aged version of our Belgian Tripel is one of the most unique and delicious beers we've made to date. With notes of apple, oak, caramel, and spice, this beer gives you so much complexity while still leaving you with a nice, smooth finish. We only made one barrel of it, so get it while you can!
