Dry-Hopped Pretty Polly is the first of the brewery’s barrel-aged sour line. The base beer is a saison that was soured in the kettle, then fermented in a pinot noir barrel with a another ale, fermented 100% with Brettanomyces.
Dry-Hopped Pretty Polly features Mosaic, Citra, and Nelson Sauvin hops. The brewery says that the flavor is vinous, fruity and some what oaky, overall rather complex.

A: Pours a lightly hazy pale to medium golden yellow in color with moderate to heavy amounts of active visible carbonation rising quickly from the bottom of the glass and faint apricot colored highlights. The beer has a two finger tall foamy light beige head that reduces to a large patch of medium thick creamy layer covering the entire surface of the beer evenly with a medium thick ring at the edges of the glass. Moderate to significant amounts of lacing are observed.
S: Slightly stronger than moderate aromas of tropical/mango, tropical/pineapple, and citrus/grapefruit hops over the top of moderate aromas of brett-like funkiness and hints of vinous/white grape notes. Very light aromas of lightly toasted cereal grain malts.
T: Upfront there are light flavors of lightly toasted cereal grain + pale malts with a hint of caramel malt sweetness. That is followed by slightly stronger than moderate flavors of brett-like funkiness with light flavors of vinous/white grape and light to moderate amounts of tartness. Finally there are moderate flavors of tropical/mango, tropical/pineapple, and citrus/grapefruit hops which impart a light amount of bitterness which fades pretty quickly leaving a lingering tartness.
M: Medium bodied with slightly heavier than moderate amounts of carbonation. Moderate amounts of acidic prickliness.
O: I found this beer to be really well constructed - the combination of hoppiness, tartness, and sweetness are really in sync and the tropical fruit flavors pair well with the brett funkiness. Very enjoyable and very easy to drink, I could easily have this one again.

Thanks Kirb/Jarad for the chance to try this one. 375ml waxed bottle poured into a snifter. The brew appears a clear copper color with white head.
This smells tropical with a combination of fruity hops and bacterial driven fruitiness. A stinky cheesy aspect is present bringing out the funk and oakiness.
This tastes bretty and earthy with a tropical tangerine backing, oak and dusty brett influence before flavors of caramel toasty grain.
This is medium in body with light carbonation and is very easy drinking. Not sure what I was expecting out of this but it was satisfying.

Very unusual. Not certain how I feel about it. Worth trying if you want a different beer but there was something a little off about the finish for me.

Poured from a green wax topped bottle into a snifter, the beer is a bright, opaque, golden-orange coloring with a fluffy, foamy, dense, white head that isn't going anywhere thanks to the constant feed of carbonation throughout the body. Aromas of tropical fruits forward, with pineapple, mango, and apple, all with a dry, grassy hops characteristic. Some subtle grape and cherry notes highlight, as well. Flavors are herbal and spicy hops forward, with heavy vegetal and grassy notes, followed by a tropical blend of pineapple, mango, and melon. Subtle dryness on an otherwise effervesced, almost bubbly body. The aftertaste is more of the tropical fruit, with some dry grape and cherry notes, as well. Decent resinous hops linger, too. The finish is light, effervesced, and fairly clean.

Appearance: After a modest gush, the beer pours a cloudy pineapple juice color with a modest head that fades rather quickly though it leaves some splashes of lacing
Smell: Cheesy funk dominates, with hay, stone fruit and hops underneath
Taste: Funky and tart, at the outset, with stone fruit and vinous grape flavors building; in the middle, the oak, the hay and the hops add balance; the finish is a return to the funk and tart elements
Mouthfeel: Medium body with moderate carbonation
Overall: So much better than the regular Pretty Polly, in my judgment; the extra dose of hops makes the flavors come together and cuts through some of the sweeter elements that bothered me about the base beer
