Imperial Stout fermented with English yeast. 10%
Look: Pours a deep, jet back with a nice mocha head that leaves great lacing and retains pretty well.
Smell: Bourbon hits like a ton of bricks. The brewer indicated that these were very wet barrels, and you can smell it. Oak and bourbon hit immediately. All supported by hints of roasted barley, dark chocolate, and dark fruit.
Taste: Again, the bourbon and oak dominate. Not as balanced as the Heaven Hill version, but if you like bourbon heat and character, this one is for you. Lots of oak as well. I'm somewhere in between. The bourbon is enjoyable, but a touch much at times. Very nice roasted malt and dark fruit character helps to tame it, if only so slightly.
Feel: This is where this one totally shines. Light, almost cask carbonation and a medium-full bodied. Maybe the perfect mouthfeel for a stout, and it achieves it at 10%, not 15 or 18. Appropriately sweet, but nothing extra to bring everything down. Big, viscous mouthfeel. Nothing to complain about.
Overall:
Having had 5 or 6 of the dark creations now, Redbeard knows stouts. This will be debated by some, but the barrel character on this is just too prominent. Still wonderful. And that mouthfeel.
