Appearance: Clear, pale amber. Frothy white head with moderate retention
Aroma: Floral, spicy hops. Grainy malt
Taste: Spicy and herbal. Moderate bitterness, does not linger too much.
Mouth-feel: Light to medium bodied. Semi sweet. Finish is relatively dry though and medium in length. Moderate carbonation.
Overall: Rating this beer vs other Maibock style beer. Strong effort on Maibock by Cherry Street. This one is a little lighter bodied than most German imports (see Hofbrau Maibock). It's quite sweet, much like a dopplebock, but there is a moderate bitterness that gives it some nice balance. Would like to see a more persistent head. For seasonal drinkers, this is a great Spring transitional beer before the weather gets too hot. It would be appropriate to describe this as a paler version of Dunkles Bock. I'd buy it again.
