a real interesting beer here, blended with kombucha and wild fermented. i have yet to like a kombucha beer, but the flavor here is way more fruit than it is vinegar from the tea, and as a result works quite well with the brett thats present. it never gets sour, but has some lactic acidity to it. the fink definitely trumps the sour. the beer is a bit still for me, i like more carbonation, and with all the fruit in here it gets a little sweet for much heavy drinking, but i like the idea, and i like the execution. brewpubs that experiment like this i think are rare, they all play it so safe with their golden lagers and dry irish stouts and american ambers. i appreciate an operation willing to go in this direction, even if the beer itself is only a little better than okay. good use of kombucha, never though i would say that...
