We ‘withheld’ some of the alcohol and bitterness to create a sessionable Belgian-style wit beer. Wit-held is an unfiltered wheat, brewed with Belgian pilsner and German pale wheat, finished with hops from the Pacific Northwest and Australia. It has a hazy off-white color, smooth mouthfeel, with a delicate balance of sweetness and orange spice. The finish is crisp, semi-dry and refreshing with very mild hop bitterness.

Taste at brewery. Very pale yellow, light cloudiness, a few bubbles. Aroma is light banana, savory notes. Taste brings coriander, light yeasty flavors. Smooth.

Pours a very light straw color. Scent of lemon, wheat, and coriander. Lightly spiced on the palate, with coriander and clove. A nice take to add a bit more pizzazz to a standard witbier.

Pours a huge, soapy white head. Yeast and floral hops with a touch of citrus in the nose. Hazy, straw color. Starts bitter with a burst of spice and citrus peel. Moves into a really robust citrus flavor as the spice subsides. Malt moves in about this point.
This is pretty nice. It's a very complex and assertive spicing, but it's not too overwhelming. Well done.
