In 2014, Taxman “declared” its brewing independence with the release of Declaration, a Belgian-style DIPA and the first beer brewed in Bargersville. In this East Coast inspired double IPA, copious amounts of citrus hops dominate the aroma and palate. Light malt flavors and delicate Belgian yeast notes round out this unique ale.

A - Medium gold pour with moderate carbonation and dense white, frothy, creamy lacing.

S - Yeasty aroma with light citrus.

T - Yeasty malt base with nice citrus and spice over top while finishing balanced with a slight bit of farmhouse citrus twang and lingering resiny yeasty citrus underneath.

M - Big body that finishes wet and has a well hidden ABV.

O - I really appreciate the Belgian twist on an American style, this totally works and it's well executed, being two months out makes it even more impressive. This is a recommended mind bend.

Taster at brewery. Pale hazy yellow, wispy head, solid lacing. Fruity aroma, lemon, citrus. Taste is sweet (lemon, vanilla) and bitter. Light bodied, but leaves a persistent tickle on the palate.

12oz canned 8/24/20 ( 34 days ago) poured into a Spiegelau IPA glass at fridge temp 9% ABV 45 IBU. The beer pours hazy peach colored amber with sticky off white head. The head recedes to a thin cap and leaves spider web lacing 360 around the glass. The aroma is moderate in strength featuring bubblegum, candied orange, grapefruit, peach, pineapple etc. The taste is barely sweet honey & biscuit malt with a big fruit salad punch before an earthy moderately bitter finish. The mouthfeel is medium bodied with average carbonation and a mostly dry finish. Overall, great Belgian DIPA with the bubblegum yeast notes woven seamlessly into the fruity hops.

A thanks to the commander of the canquest, woodychandler, for this beer. Poured from a 12 oz. can. Has a bright golden color with a 1/2 inch head. Smell is of yeast, fruits. Taste is alcohol, spices, fruits, some sugars, more alcohol. Feels medium/full bodied in the mouth and overall is a solid beer, but a bit to boozy for my liking.

I wrapped up yesterday's New Beer Sunday (Week 717) with a brewery horizontal of Taxman B.C.'s beers, courtesy of @jkblr who sent me a number of their CANs in a recent CANTrade in support of The CANQuest (tm). I also have a couple more, courtesy of Tavour & so they will be my next reviews.

I was quite excited to Crack! this one open since yesterday was such a success! I employed a C-Line Glug that resulted in the formation of a massive amount of head, causing me to have to back off, at least momentarily. I wound up with two-plus fingers of dense, foamy, rocky, French Vanilla-colored head with excellent retention, leaving wonderful lacing in its wake. Color was a cloudy Yellow-Gold (SRM = 4 - 5). Nose had a fantastic grapefruit citrusiness along with a mustiness from the yeast. Mouth = watering. Mouthfeel was medium-to-full, not quite creamy, but on the approach. The taste was not as bitter as their measurement led me to expect. Instead, it was tempered by a fruity mustiness as the result of the yeast. I really liked it in that while the grapefruit flavor was still evident, it was not overwhelming. I have had some that tasted like pith, rind, seeds & juice and left me cold as a result. This was quite pleasant and dangerously easy-drinking at 9% ABV! Whew. Finish was semi-dry, just fruity enough for me not to be able to say "dry" outright. I really think that the interplay of the yeasty esters with the bitterness of the hops worked extremely well in this case. I may have found a new brewery on which to focus my attention!

Soft and light yellow body; slightly hazy; respectable white, fluffy head. Esters; aroma of peach and earthy spices. Fine flavor mixture of powdered sugar; candi sugar; hard-to-define ester qualities; boozy. heavy body; thick and chewy; big alcohol warmth.

A heavy-hitting IPA with a distinct Belgian-styled twist to things. Perhaps a bit hot and boozy yet still approachable.
