Man this is a departure for Taxman.
I had two bombers of it right when it came out and am now reviewing the beer several months after sitting in the cellar.
The look is something interesting. Fizzy head that disappears very quickly and it leaves a kind of sediment on the side of the glass.
Smells like mexican chocolate cake. My favorite part of the brew.
Taste is weird after aging. My tongue gets hit with this burst of almost sour/bitter bite. The barrel/bourbon character starts coming in after that. Almost reminds me of a sour with how it hits my tongue which really throws me off. It's one of those beers where you taste it and go "what DOES that taste like?". Aftertaste was spices and coacoa nibs.
Body is extremely light with the lacking element of the chocolate to back it up when it was fresh. Thin.
Overall drink it now, don't age it. It was better fresh. I drank this instead of my bottle of Death & Taxes but this bottle left me a little upset at myself for aging it.
