As I embark on my journey through the Evasion series, I'm starting with a few from Taxman Brewing. I've chosen a tulip glass and a serving temperature of 48 degrees. The pour reveals a frothy, airy, one-fingered, dark tan head with poor retention, leaving only a thin, foamy ring around the glass. The inky black, opaque color, charting at SRM 38, is visually striking. While the head could have been more enduring, the overall appearance is intriguing.
When the beer is poured into the glass, a considerable amount of vanilla, maple syrup, and chocolate aroma is emitted. Nosing the glass, I smell coffee, bourbon, Maillard, smoke, and char. Swirling the glass and smelling it again, I detect floral, molasses, earthy, woody, caramel, toffee, raisins, alcohol, and tobacco. The chocolate and coffee come across as run-of-the-mill grocery store stuff. I hoped the chocolate and coffee aromas had more character. While barrel-aging adds a significant depth to the stout, it also has an alcohol nose-burning scent.
With each sip, the beer reveals a complex flavor profile. The initial notes of maple syrup, burnt sugar, coffee, bourbon, and oak are delightful. As the flavors evolve over the palate, char, smoke, Maillard, with bread, roasted malts, tobacco, molasses, and figs take shape. The more I consume, the more the beer's unique character unfolds, with floral esters, a heavier char note, earthy, toffee, caramel, lightly toasted bread, dough, wood, and a minerality note. The intense barrel presence often overshadows the stout, but the surprise of the maple syrup cutting through the darkness is a pleasant twist.
The mouthfeel is warming and chewy. It finishes slightly dry with some astringency. The body is heavy and has medium carbonation.
This is my first foray into the Evasion series; I have four more to review. I lost one in the cellar; I'm not sure why, but it was oozing out of the can. The beer is heavy-handed, with the barrel aging and losing the base stout beer in the mire. I was pleasantly surprised to taste the maple syrup; in many beers, that flavor is lost in the great beyond. Overall, it is average; it comes across as unbalanced and hot sometimes, especially as it warms up.
