a belgian dubbel type brewed with plums, a natural union i reckon, and the beer is really super good! lighter in color than a lot of these, nowhere near brown, more of a dark copper or even bronze color, patchy white head but way to still on the appearance and mouthfeel for something belgian and sweet like this, thats really the only weak aspect. the flavor is great, a tad of tart from the skin of the plus, a common but well used belgian yeast strain, notes of brown sugar and toffee, buttery and big, less plum left than expected, its fairly worked out of here, but its subtle impact makes this very distinctive. lots of body, and a lot of yeast flavor in here, white pepper and anise notes, rock candy, minerals, this pretty much gets down on its knees and pleads for a cabernet barrel, i hope that happens one day. a spiced rum barrel would be just right too. it needs a little mellowing, and they could be more forthcoming with the plums in here, but this is a great idea and a great beer, a new high water mark for paradox...
