Twist on a traditional Saison. Uses 2 strains of saison yeast secondary fermented with lemon and lime. Low hops. Tart, citrusy, refreshing.

Pours hazy and soft yelllow with a very fat head of bubbly foam that makes you wait. The nose is crisp with the scent of lime. The lemon is soft and generous and so is the cracker malt. Spice and grasses mingle with lime. Lime goes well with herbal hops. The sugar is a fresh sweetness over the top of the beer and the hops are at once cool when they glimpse that sweetness. The drink is tart. I mean tart and bubbly and tastes like lime. Dry but it has a generous malt. A soft sweet cracker. The spice and hop pepper finish this one and bitterness lingers.
If you do not like the clean taste of lime and seltzer or maybe even a white wine spritzer, then you will not like this beer. The tartness is not exaggerated for the style but it will surprise you if you are too tamed and looking for sweets. Refreshing, crisp, bubbly. Perfectly dry.
