The idea behind the Guy Rye Series is to pair Rye malt (15% of the grist) and Nelson Sauvin hops together in a similar wort profile. Malted rye has a unique distinctive flavor profile that is described as "spicy" (not heat, rather more like a cooking spice). Nelson Sauvin hops hail from New Zealand and are very high in the aromatic oil humulene. Think fresh white wine grapes and fresh gooseberries. Now, the wort profile is where we like to play. Lil' Guy and Sour Guy are similar, but SGR uses lactobacillus to lower the pH, as well as a gentler water profile and hop additions. Big Guy and Gigantic Guy are similar, but Gigantic is higher on the amount of sugar used in the kettle and a higher IBU target. Middle guy meets that family in, well, the middle. A slight maltier approach with English Carastan, and a slightly softer water profile balances this beer. Don't worry, it still has enough hop presence to not be cloying or sweet. We pair Nelson hops with Chinook and Cascade to develop some piney, grassy, citrusy depth.

We love how this beer turned out, and it was at the top of beer sales charts for the week! We were very pleased to see that!
