Collaboration with Jester King Brewery

Collaboration Pecan de garde w/ Jester King Brewery, using raw wheat and pecans from Arizona and Texas. Primary fermented (Jester King mixed culture) and matured in French oak puncheons for 18 months and naturally conditioned for 3 months.

750ml bottle share from Jeremy. Hazy, light copper, small airy head. Tartness is fully evident at first whiff., lots of big fruit flavors. Taste mellows out a bit, more of the malts come through, a bit of nuttiness, more wood. Rounds out nicely.

A: Pours an opaque yet still clear slightly reddish cola brown in color with moderate amounts of fine active visible carbonation rising quickly along the edges of the glass and slightly heavier than moderate ruby red + chestnut brown + amber colored highlights. The beer has a two finger tall fizzy sudsy light beige head that quickly reduces to a small to medium sized patch of very thin film and a very thin ring at the edges of the glass. Light amounts of lacing are observed.

S: Slightly stronger than moderate aromas of vinous whie grape/vinegar, dark fruits (cherry), and pecan nuttiness over moderate aromas of toasted bread + dark + caramel + wheat malts with minimal amounts of sweetness. Just shy of moderate aromas of earthy funky brett and tart lemon citrus lacto as well as a hint of spicy + herbal hops.

T: Upfront there are moderate flavors of toasted bread + dark + caramel + wheat malts with minimal amounts of sweetness. That is followed by moderate flavors of dark fruits (cherry), vinous white grape/vinegar, slightly earthy funky brett, and tart lemon citrus lacto. Slightly stronger than moderate flavors of pecan nuttiness and light flavors of spicy + herbal hops. There is a minimal amount of bitterness from the hops and it fades very quickly leaving a tart + earthy + nutty funkiness lingering.

M: Light to medium bodied with moderate to heavy amounts of carbonation. Moderate amounts of acidic prickliness.

O: Very easy to drink with well hidden alcohol and a light mouthfeel that makes it refreshing. A very interesting combination of flavors and aromas making it unique and very enjoyable. Would gladly have this one again.
