Saison left overnight in our coolship to wild yeast and bacteria, transferred to barrels to begin fermentation, several days in we pitch in our house saison strain harvested off our elderberry tree in Leesburg to finissh fermentation. We added buckwheat to add more complex sugars for the wild yeast. Dry hopped with German Amarillo

I quite liked this one. It is fruity tart with the likes of peach and apricot sneaking through the more tart fruit than vinegary sour flavors. There is some sweet vinegar coming through, but it is an undercurrent to things like gooseberry with a few squirts of lemon. A lingering tart tingle lasts beyond the fleeting notes that show that a barrel was involved. Ideally, I’d want a little more barrel and or funk from the wild yeasts, but that’s only explaining how I could rate this even higher.
