Hazy, honey amber with a loose, frothy white head that quickly dissipates. Tiny rocky blotches and occasional lace grace a Cisco fisheye pint glass.
Farmhouse funk is subtle with occasional notes of whiskey. Fresh cut straw and fermenting apples give way to caramel. Warmth brings out light pine sap and hoppy aromas.
The initial impression is similar to apple cider and a touch of whiskey. Rye bread with caraway seeds brings balance to the bitter/sweet/sour profile. Warmth builds an earthy finish and possibly faint smoke.
The body is medium to full with modest carbonation and a nylon texture. Slickness is cut by alcohol as expected.
This is one of those pleasant surprises, a Whiskey Saison. It works, albeit a little ungroomed. Galaxy maintained the subtleness of a Saison and produced a new twist worthy of further exploration. I enjoyed this with friends on a hot late-summer afternoon as a reward for a hard day's work.
