BOURBON BARREL AGED STOUT W/ WHITE MISO

This Origin of Darkness collaboration is with our great friends at Wild Beer Co. from Somerset, UK. and is an homage to our mutual love of Asian cuisine. We added freshly caramelized white miso to the bourbon barrel-aged stout. The combination of earthy Umami, dark chocolate, and bourbon vanilla is a truly delicious experience.

From a 500ml bottle into a snifter
Released in 2018
Bourbon barrel aged stout with white miso

APPEARANCE: Clear black pour yields a one finger, thinner looking dark tan head with okay retention. Black body and no carbonation evident. Head fades to a full wisp and cap. A slight wisp and ring remain leaving no real lacing on the glass as it empties.

SMELL: Roasted aromas, bourbon, milk chocolate, vanilla cream and some chocolate brownies on the nose.

TASTE: Bourbon, milk chocolate and some lovely gram cracker flavors up front. This must be the white miso addition. Some decent alcohol at the swallow as well. Bold finish of gram, bourbon, milk chocolate, vanilla cream, some lovely chocolate brownies and some definite booze linger on the palate. Really nice and flavorful.

PALATE: Medium body and lower levels of carbonation. Silky slick on the palate, creamy enough, goes down fine with a bit of a burn and finishes sticky on the palate. Some heat lingers.

OVERALL: Really good stuff. Great, even. This is a flavorful and aromatic imperial stout and misto addition has added a lovely gram character to go with the chocolate brownies and bourbon barrel. Really nice and the series is a definite winner. Check it out now if you can. Thanks again guys!

I rated the first bottle now I’m rating second bottle and drinking it today. It has aged good.Still got a dark dark pour. With a smell alcohol. Taste like it did the first time maybe a little bit more flavor coming out.A light bitter finish but still good. Over all outstanding

Very dark, a wisp of a film - maybe less head than I have ever seen. I'm drinking it pretty warm, I'd guess about 55-60 F. Some aroma of bourbon and chocolate and some other earthy tone. Taste of bourbon, chocolate, a little salty and umami. Feel is a little creamy, very low carbonation, and alcohol heat. Overall, this is an interesting taste but not something I would often return to. Find someone to split the bottle with.

Viscous black pour with some lacing on the glass. Smell is strong chocolate, with supporting bourbon, vanilla, barley, and caramel, with a lingering earthiness. Taste is the same, with a what I can best describe as unami, also like a ginger root base to it, guess that's the miso. Interesting to say the least, but does get bitter as you go down the glass. Feel is sticky and easy drinking, but I think some more malting and thickness would help this one out

Appearance - Pours a jet cola black with two fingers of mocha tan head.

Smell - bourbon, vanilla, oak, earthy and leafy hops, cocoa, roasted malts, soy sauce aromas, and earthy yeast.

Taste - bourbon, vanilla, oak, and earthy and leafy hops upfront. Then a dominant umami flavour comes in followed by the cocoa and roasted malts. The earthy yeast finishes the brew off.

Mouthfeel - Medium to full bodied with moderate carbonation. Finishes smooth and velvety with the bourbon and umami flavours lingering.

Overall - A very adventuristic offering that delivers on all fronts. I was wondering what white miso would bring to the table with this stout but it adds a pleasant umami flavour. Another gem from this limited barrel aged stout series.

A-pour is jet black from bottle to glass with a small tan head which is dissipating into a minimal lace ring along the tulip
S-white miso ? nothing smelly
T-bourbon is upfront and dominates
MF-mild carbonation , feels full bodied
Ov-not a drainpour , butt no wow factor

L: Poured from a bottle to a pint glass. Had a dark brown / black color and a thick, opaque consistency. There was a quarter inch of foamy, tan-colored, fairly long-lasting head. Very good lacing.

S: A very nice aroma of malt, chocolate, vanilla, bourbon, and caramel.

T: Tasted of a moderate amount of dark chocolate (a dominant force), a good shot of bourbon (and its accompanying barrel), a hint of vanilla, a bit of the miso, and a little caramel. An interesting take on the imperial stout. The miso doesn't really register in the face of strong flavors like chocolate and bourbon, but does add an interesting dimension.

F: A good amount of carbonation with a smooth finish. Medium-bodied.

O: This beer isn't for everyone, but if you want something different, give it a try. Drinkable.

Very little head production; a turbulent, nitro-like pour finally managed about 3/4 of a finger of dark tan foam. Retention, for what it's worth, is actually very good. Brew itself is motor oil black and intimidating.

Aroma is redolent of typical strong BBA stout profiles. Roasty char, licorice, molasses, caramelized brown sugar, toffee, oak, coconut, mash, vanilla, chocolate, coffee; really quite wonderful. White Miso isn't something I can pick out individually, but from what I've read, it seems like it would blend into a BBA stout profile anyway.

Flavor follows: it's a delectable BBA AIS, with a slightly sharp barrel influence, bitter dark chocolate and burnt coffee tones, sweet red grapes, caramelized brown sugar, and a soy-like umami that, while naturally fitting with the White Miso, isn't out of place in many adjunct-free stouts. It all comes together quite well.

Thick and chewy; really impressive feel.

This beer is exactly what you’d think it would be like. It’s an very acquired taste and not for everyone. It wasn’t my thing, but I didn’t regret trying it.
