IMPERIAL STOUT AGED IN CANADIAN RYE WHISKEY BARRELS W/ CINNAMON, MARSHMALLOWS, COCOA POWDER, LACTOSE

Our pals from Civil Society spend most of their time in the muggy Florida heat. So we wanted to give them a taste of a Canadian winter! We collaborated on a beer inspired by the perfect cold-weather cocktail: Fireball and hot chocolate. This imperial stout is brewed with a huge amount of cinnamon, marshmallows, cacao powder and lactose sugar. After getting aged in Canadian Rye Whiskey barrels for 9 months, this Florida/Canada lovechild is ready to drink!

Origin of Darkness from 2020 - really? I have to get better at not sitting on beers, but I am not certain age has hurt this...
Split 2 ways - 6 ounces each.
Pours a deep black, slightly thick out of can, with a brief tight red tinged dark tan head. Sticky particulate left on the glass.
The nose hits with a truck load of cinnamon - cinnamon toothpicks from my childhood, cinnamon red hots, some doughy malt, vanilla, hints of cocoa and as warmed a bit of woody char. But cinnamon...
Taste is sweet - cinnamon, bready/doughy malt, vanilla, a bit of spiced chocolate - cinnamon spice heat adding to the bit of whisky burn.
Full but not thick mouthfeel with somewhat muted carbonation; the cinnamon spicy sweetness hangs. Good but maybe just a tad too cinnamonny sweet - 6 ounces was plenty.

Would be a great stout. TOO much cinnamon. Tone that down and you have a very good beer.

Pours a very dark frothy rich dense 1 finger head with great retention, sticky lacing, jet black color

nose brings a ton of cinnamon out front, hard to get past that, finally there's a bit of a fruity character, dark chocolate, cocoa, sweet maple syrup like character, caramelized sugars, a bit of roast and lactose sugar

Taste is sweet, quite sweet, again cinnamon dominates but doesn't over power as much as the nose, I do get some Canadian light fruity malt-liquor-whiskey like flavor, cocoa and dark chocolate, a bit of marshmallow and caramelized sugars, sweet brown sugar, a little roast and char, vanilla, spice, a bit of coffee with the roast, a bit of burnt lactose, some bitterness, sticky sweet finish with a bit of hot alcohol

Mouth is fuller bod, a bit creamy, lush, some warming tingly alcohol, med foamy carb

Overall it has promise, but cinnamon just overpowers everything, def something you want to go light on, and generally too sweet, but otherwise it was decent

355ml can poured into tulip.

Looks intimidating. A lightless black abyss with half a finger of dark brown head that leaves a sturdy sheet of suspension bridge lace as it recedes.

Smells like an insurrection at a bakery. Cinnamon buns, chocolate cookies, a whiskey hot toddy, rice crispy squares, pecan pie and burnt wood.

Tastes of singed cinnamon, creme brulee, campfire s'mores, raisin squares, more pecan pie, sweet black licorice and wet ash.

Feels thick and rich. Full bodied with smooth carbonation. Finishes sweet and chewy.

Verdict: Vigorously recommended. Very rich and dessert-like, great for a long movie.

I am really liking this brewer...

...The second of three CABs that I have on hand and after really, really liking the first one this second one was even better - way better. Creamier, more flavorful, and an even blacker look than the other one I had, this was truly special. Both in the nose and on the tongue the scents and flavors of chocolate, cinnamon (sweet, mind you), and even a taste of marshmallow was distinctive. Not sure what to expect on the next one, but the bar has been set high.

Can: Poured a pitch-black color ale with a large dark brown foamy head with good retention and some lacing. Aroma of strong cinnamon and sweet black cholate notes is very dessert-like. Taste is strongly dominated by cinnamon with some heavy residual sugar notes, sweet chocolates and pastry like notes with some faint rye barrel notes. Body is full with nice creamy texture and good carbonation with no real apparent alcohol notes. Cinnamon is a big strong but still enjoyable as a party stout.

Moderate to vigorous pour yields a 3/4 fleeting tan head over a black body with scant lacing. Cinnamon and whiskey on nose. Cinnamon, chocolate, vanilla, and whiskey on palate. Good feel and overall, a bit much on the cinnamon, like almost way too much, and probably is way too much for most people. Reminds me of the time when we were kids and my older sister made some kind of cinnamon cookie but doubled the amount of cinnamon in mom's recipe. Yikes!

Pours a black color with a minimal head that lasts quite a while. Aroma is cinnamon. Tastes of chocolate, vanilla and cinnamon. Very sweet; no bitterness. Good mouth feel.

Very strong cinnamon, thin body, boozy. Tastes like a boozy cold double double coffee.
