Name: Caramel Super Stout
Brewery: Out of Bounds Brewery
Location: Rocklin, CA
Style: Imperial Stout
ABV: 11.4%
Canned: 01/30/2019
Date: 20 April 2025
I bought this one pre-covid. It has sat in my cellar since then. I am using a tulip glass and serving the beer at 50 degrees. The pour created an airy, one-fingered, light tan head with above-average retention. The slow dissipation left no lacing on the glass, only a ring around the liquid. The color is pitch black with dark rusty red hues, charting at SRM 38, and opaque. This beer's appearance is average.
Nosing the glass, I smell molasses, vanilla, dark roasted malts, char, raisins, toffee, caramel, chocolate, medium-roasted coffee, and earthiness. Smelling the glass again, I noticed tobacco, leather, floral, and grassy.
Sipping the beer, I taste toasted dark bread, toffee, anise, vanilla, raisins, toffee, caramel, chocolate, treacle, flower bouquet, dark roasted malts, medium-roasted, and earthiness.
The mouthfeel is smooth and chewy, finishing slightly warm. The body is heavy and low in carbonation.
What a surprise! This beer is six years old, and it is fabulous. Sadly, COVID got the brewery, and it shuddered its doors. I am glad I had the opportunity to imbibe at the counter and purchase a few bottles for the road.

Wow, super nice stout.
I purchased a bottle of this stout.
It has a very nice head. Very small bubbles, almost like it’s nitrogen-pushed. And it cascades wonderfully. A nice tan head that leaves a nice lace.
As for the color...black as night. Placed my flashlight behind it, and nuthin. Mandatory in my stouts!
The body was nice. Not as thick as Id like it, but definitely a stout.
The smell? That was a bit different. I didn’t quite get the caramel scents that others write about. There is definitely a roasted smell there...but I prediminantly smell something like sweet candy. A thin, not thick, smell. I’m guessing it’s the floral smells of the yeast used.
The smell is kind of throwing me off, as I love to drink my beers a bit cooler than room temperature so it produces a good head. And I love the head for the aromas it gives. But this one doesn’t really give me the thick “caramelly” scent.
I smell the roastiness and the sweet fruitiness more than anything.
It’s a wonderful beer with nary a strong bitterness. Smooth.
It is smooth, and kinda creeps up on you with that 11% ABV.
The ABV is a bit high, and reduces my drinking to MAYBE a 3/4 pint glass at a shot.
After that, it would be “lights-out” for me.
Bottom line, a fantastic stout from Out of Bounds brewery. (A 15 minute drive from me).
One of my favorite stouts.

Honestly a great beer. Dark with a good head. Huge caramel nose and the taste completely follows. The flavors melt together like a desert in your mouth. This is a high quality beer from a local brewery. I'm all over this one.

Strong caremel aroma with some boozie alcahol notes. Very dark in color with a dark creamy head. Body was a little light for the punch of flavor from the caramel. A little too intense from me I thought it drowned out the other flavors. The beer definitely tasted like it was 11%, it had that taste of alcahol.

Appearance - Pours black with cola brown edging. Khaki, half finger width head displays fair retention before breaking down to a mostly barren surface and a thin ring around the edge of the glass. Not much for lacing save a few small, random spots.
Smell - Wonderful aroma, hitting primarily on caramel, but doesn't skip on some BBA-like vanilla and booze character and some lesser malt roast.
Taste - Follows the nose. Deep caramel upfront and throughout with vanilla and boozy character following closely behind. Mild roasted malt in the finish. Aftertaste lingers with caramel, bourbon-like character of booze, oak and vanilla, and faint coffee roast.
Mouthfeel - Full-bodied with moderate carbonation. Somewhere between creamy and silky texture, with a mostly dry, boozy finish.
Overall - Maybe I'm just in the right kind of mood, but this beer is really hitting the spot right now; it doesn't hurt that the caramel is wonderfully deep to help offset the potentially astringent bite. Wildly aggressive beer, but also wonderfully balanced, if that makes sense. For the price, I'll be hunting this one down again.
