Shit this was kind of a letdown. Had this back in February 2019 I think. Might have been a guest tap at Rare Barrel or a beer at the Bistro's dipa festival. Notes right around that time.
Hazy yellow pour, 1/2" white head. Looks more like a hazy ipa. Aroma wasn't all giant huge typical of Cellarmaker, even made me wonder if they got the hop schedule backwards and dry hopped with Simcoe and used Galaxy as the bittering hop, I dunno, usually Galaxy drops a hefty dose of pineapple and I just wasn't feeling it here.
Taste went the same way, fully realized, ok, I taste the Simcoe, the dry bitterness, the fruit skin and rind like impact of grapefruit. Galaxy, pull your weight man, where art thou? Certainly the 7.2% alcohol sting coupled with the Simcoe brought a degree of bitter bite that I wasn't expecting when reading about and looking at the beer.
Sometimes Cellarmaker (often) knocks it out of the park. The minority of the time, there's a let down or two, but never have they produced a bad beer or one that has significant off flavors. This one just didn't jive with me as much as I hoped, but others seem to really dig it so shine on ya crazy diamond.

On tap at the brewery.
Hazy orange with thin white head. The nose is a blend of citrus and tropical fruit with a little bit of melon. As it warms up, I get notes of green grapes as well. The palate opens mildly juicy with grape, peach, melon and a little honey. There's some citrus as well. The palate opens mildly juicy but a blend of oat, honey and a little soft white bread add a little depth to the palate. Tropical with mango and papaya with some grape, Clementine and peach coming thru. Drying on the finish yet a little full, this is wonderful on the body. Creamy, full yet light and delicious.

Big foamy creamy head, thick lacing, very hazy golden honey color
Nose huge fruit explosion, over ripe peach, honey dew melon, little citrus, mango, fruit tea.
Taste brings a little cereal grain, creamy wheat, more stone fruit less fresh peach and more under ripe peach apricot, a little citrus and touch dank, touch pineapple mango, rind, fair bitterness, touch melon, little sticky finish, lingering big bitterness and more fruits
Mouth is med bod, little creamy, decent carb
Overall another fun beer that was not what I expected but still good

Pours a clear light orange verging on straw colored with an eggshell white head that quickly dissipates. Aroma is heavy Simcoe: overripe tropical fruits, peaches, and mango. Very dank aroma with some astringency. Taste follows the nose well, very dank and fruity. A lot of astringency. Finishes a sweet and slightly dry with a dank hoppyness that sticks on the palate.
