Wet hop season is in full swing. For this beer we employed a family member to pick up freshly harvested wet (undried) Mosaic hop cones from Perrault Farms in Washington at 6 am and drive them to SF. By 8pm the Mosaic was being introduced to hot wort from the brewhouse infusing it with aromatic oils and green aromas you don’t get from dried hops. Warning: 10/10 on the intensity scale!

On tap at Spokeasy Public House
A: Pours golden amber with a frothy off white head that settles to a thin layer and laces nicely.
S: Dank herbal green side dominates, spicy pine, faint citrus and tropical fruit, biscuity malt, and just a hint of sweetness.
T: Green spicy pine, dank herbal notes, citrus, lemon and a hint of tangerine, tropical fruit, papaya, faint guava, and apricot, biscuity malt, and just a touch of sweetness.
M: Medium body, moderate carbonation, pretty dry.
O: Showing off everything great about fresh wet Mosaic hops.
