Green Knuckle is our new annual series of single-variety wet hop beers, brewed to showcase each cultivar’s vibrant and radiant character. Harvested straight off the vine in the morning and in our brewhouse by the same afternoon, these beers truly present each hop in its purest form.
Wet Mosaic hops are possibly the stickiest and most oil saturated cones we work with all year. From BC Ranch in Woodburn, OR, the hops effuse the most raw and intense aromas of blueberry skins, passionfruit, and green guava. With light touches of tangelo and cannabis flower, this version of Green Knuckle checks all the Wet Hop boxes. Each batch should be consumed quickly, as the delicate compounds that make these beers so vivid and unique degrade rapidly. These beers are peak hop season in a glass, so please enjoy them while it lasts!

Wet hopped IPA with—you guessed it—Mosaic.
West coaster, from a can. Couldn’t make out the date stamp but it was at least a week old (since purchase) and probably a week before that (in distro). And I didn’t see this at Cellarmaker when I visited it during the last week. I digress.
Low, light aroma with a touch of blueberry and a few freshly cut grass sprigs. The sip follows, albeit more pronounced, with a mild bitterness and a drying finish. I don’t get a whole lot of wet/fresh hops at this point but it is enjoyable all the same.

had the pleasure of drinking this in close proximity to the citra edition, which is also excellent, but this one takes the cake for me, mosaic at its absolute finest in a beer thats clean and minimal enough for its full character to be on display, undeniably mosaic, punchy and forward but unforced, elite level overall quality here and a joy to drink on! this thing is a sensory treasure, mouthwatering freshness, and it reminds me of when mosaic first came out, when it was unlike anything anyone had ever tasted, this captures that initial purity and magic so well. its intoxicating, weedy and dank for sure, light fuel character the way gasoline is kind of appealing sometimes, crushed pineapple, melon rind, candied orange peel, lemongrass, and yellow florals, really stunning, so obviously fresh hops in here, pungent in a way that is rarely achieved, and its awesome that it all transfers to the flavor, really no fall off at all there, it tastes like it smells, equally intense, weedy for sure but like, the headiest weed, the kind where a little goes a long way, except with this i want a lot, its almost addicting, slick on the palate, almost concentrated, and with a long pleasant, still evolving linger which extends well past the drier swallow. quick clean ferment, real simple light pale malt grain base, and a high thiol intensity to the hops that makes this very distinctive. for how common mosaic is, the best beers that use it still surprise and delight the way this one does, and i have to say its among the very best ive had from fresh hop season so far this year, absolute gold!
