“One Trick Pony” is a strong IPA brewed with Pilsner Malt & a rotating single hop.
We use pilsner malt, so that the malt presence provides a clean slate to showcase the hop variety.
At 9%, we encourage you not to underestimate this mild mannered beast.

This imperial IPA has no right to be as good as it is. Brewed with a pilsner malt and one hop (mosaic, in the case of this entry), it sounds deceptively plain, except it's not. It's an amazing hop vehicle for mosaic hops and honestly, it being 9% is a clear example of cognitive dissonance - you theoretically know it's 9% ABV but it doesn't taste like it, so you keep drinking it. It doesn't help that this IPA is absolutely spotless - no alcohol on the nose or in the body, especially nothing that would make you think it's hovering at the ABV it's at.
Tasting notes are pure mosaic. I'm sure this doesn't help newbies, but just think tropical summer fruit sweetness with none of the bitterness of regular IPAs. In fact, think nothing else. There's only tropical fruit sweetness. That's it. This an IPA to convert people who hate IPAs with.
Overall one of the best imperial IPAs I've had in Canada, I think. Deceptively smooth and insanely clean. Definitely one of the best incarnations of One Trick Pony, too.
