Tessellate is a golden sour beer aged in oak barrels dry-hopped with mosaic hops. The idea that one hop varietal could lend a myriad of tropical aromas and flavors to a beer piqued our interest so much that we had to explore using mosaic hops in our golden sour. Aromas of fresh mango, pineapple, and lemon zest joined with notes of juicy guava, papaya and grapefruit peel assemble a tessellation of mouthwatering flavors.

On-tap at the brewery. Tulip.

A: Cloudy chalky lemon with a finger of greasy and dense white head. The head retention on this was probably the best I've seen of their beers yet. Spotty lace was left down the glass.
S: Super juicy nose dripping with fresh hop scents of canned peaches, juicy tropical fruits, and a touch of berry and earth. I get a kick of bright acidity as well.
T: Juicy mosaic hops mixed with a clean tart acidity. I get notes of blueberry, soil, an herbal twiggy green note, and just a kiss of tropical fruit nectar. The acidity mixes with the juicy hops and creates a citrus note and lemon juice-like acidity. Finish has a kick of hop bitterness, and the aftertaste is full of tart and lingering acidity. There's almost a white wine note in the finish as well.
M: Dry finish with great balance between tart, sour, and juicy. Refreshing overall and perhaps more tart than their previous hoppy offerings.
O: Killer mosaic hop nose and flavor. IMO not as good as their other hoppy beers, but a delicious hoppy sour from the brewery that makes the best hoppy sours on the market.

Look: Poured from a growler. Pretty much no head and golden yellow.
Smell: Tropical heaven from the mosaic. Somehow this beer being a sour and dry-hopped makes this smells better than most IPAs.
Taste: Lemons.
Feel: Right amount of carbonation and slight bite of hops.
Overall: Maybe their best dry-hopped sour.
