The fifth release in our Dubious series, Dubious Pursuit is a blend of golden sours aged in oak barrels with strawberries, peaches, and vanilla. This 5 oak barrel batch is a blend of gold and red sour beer, fermented with various strains of Brettanomyces and Saccharomyces yeast and soured with Lactobacillus, Pediococcus and our house mixed culture. Our production staff took 2 oak barrels of a golden and red sour blend and then added 1 oak barrel of golden sour beer with strawberries and 2 oak barrels of golden sour beer with peaches. We then added a touch vanilla to bring it all together.

Growler into tulip.
A: Pours a lightly cloudy apricot-golden color with an inch of soft white head that quickly fizzed away into a thin collar.
S: I get a combination of juicy, lightly sweet peaches mixed with peppery and earthy spice, musty wood, and a kiss of creamy vanilla. Lactic acid tartness is bright alongside a kiss of tart strawberry.
T: Peach flavors hit first followed by tart strawberry jam, peppery and musty yeast, and finally creamy vanilla in the finish. The aftertaste is creamy and slightly doughy. There is a nice depth to the funk, with peppery, earthy, creamy quality instead of just a bright lactic bomb.
M: Medium body, smooth and creamy mouthfeel with a nice balance between sweet, dry, and tart. The finish is drying, but not a desert.
O: Anything with fruit and vanilla is going to be good, and this did not disappoint. The yeast/bug profile and vanilla mixed with the fruit create a very creamy peach ‘n cream and strawberries n’ cream sensation. Reminded me a bit of home, sour home with strawberries.
