A blend of golden sours aged in oak barrels with prickly pears. In order to showcase the delicate flavors of prickly pear, we added a ton of pureed prickly pears to a 4 oak barrel blend that was fermented with a mixture of Brettanomyces and Saccharomyces yeast and soured with Lactobacillus and Pediococcus bacteria.

Growler into tulip.
A: Pours a beautiful shade of dark red that’s a little more rich and glowing than cranberry juice. A thin cap of fizzy off-white foam briefly surfaced after the pour before dying down into a faint collar. No lace.
S: Amazing nose that is hard to describe having never had a prickly pear fruit or a prickly pear beer before. The fruit profile is a sweet smelling combination of pear mixed with dark berries, dark grapes, and light melon. The nose is also musty and earthy with a touch of funk as well, and as it warms I get notes of stone fruit and peppery, earthy spice.
T: Prickly pear flavor dominates the profile with that strange combination of what tastes like red pears, honeydew melon, red grape skins, and a touch of boysenberry. I get a hint of peach and ambiguous stone fruit, and maybe just a touch of kiwi. The finish is sweet with a slightly citrus feel to the aftertaste. Flavors remind me a bit like fruit punch at times.
M: Medium-light body, sweet and slightly stick flavors but the finish is quite dry, with soft carbonation and a solid acidic sour punch. Gritty tannins clean to my throat after each swallow. Tartness is clean and not overly harsh or vinegary.
O: Prickle pear is an amazing fruit to flavor a beer with as this is one of the more interesting flavor profiles I’ve experience in recent memory. Another well-executed sour from TRB, and one I definitely hope they make again.
