Ruby Grove is a golden sour beer aged in oak barrels with grapefruit and fresh grapefruit zest that we blended for Beachwood BBQ’s 10th Anniversary in Seal Beach! To produce this new blend, our production team started by adding grapefruit to 2 oak barrels of golden sour beer that were inoculated with Brettanomyces, Lactobacillus, and Pediococcus. Grapefruit is high in citric acid, so in order to scale back the acidity, we blended it with 2 non-fruited oak barrels of golden sour beer that were fermented with Saison DuPont yeast. After we blended those barrels together, we recirculated this blend with fresh grapefruit zest. Aromatic, juicy, tart, and spritzy, Ruby Grove will remind you of sipping on grapefruit soda.

A: Blond color, totally clear, with a head that quickly recedes to a thin ring around the glass.

A: Moderate complex grapefruit, citrus aromas followed by a clean moderate sourness.

T: Grapefruit and citrus flavors, followed by a moderate sourness with a light funk that lingers on the tongue.

M: Medium-light bodied with moderate carbonation.

O: Tasty; the beer has a great grapefruit aroma and flavor upfront that is well complimented by the clean moderate lingering sourness.

Growler into tulip.

A: Pours a lightly opaque burnt golden with a couple finger of fluffy white head that slowly faded into a thin collar. A few wisps of lace were left down the glass.
S: Bright and spritzy notes of freshly peeled grapefruit dominates the nose. The grapefruit is far from one dimensional, and I get notes of sweet candied grapefruit, ruby grapefruit, white grapefruit, fresh squeezed grapefruit juice, and a touch of bitter grapefruit pith. It’s all grapefruit, but at the same time there is a lot going on.
T: Follows the nose with tons of sweet, juicy, and lightly tart grapefruit with hints of musty oak and spicy yeast in the finish. I get subtle perfumey hints of sweet stone fruit nectar and lime zest that mix with pedio funk, creamy brett, and peppery yeast.
M: Medium-light body, crisp and light carbonation, juicy mouthfeel that has a drying finish. The tartness/acidity/sweetness balance to this blend is superb.
O: One of the best examples of citrus in a beer I’ve had to date. The complexity and depth to the grapefruit flavor creates by the yeast/bugs, barrel blend, and multiple citrus additions took me by surprise.
