a tart saison with quince fruit, i am really getting into these guys right now, and this is a cool beer, layered and interesting but also real drinkable, not too acidic for that. clean on the souring, but also with some funky saison yeast character to it too, not at all a one dimensional kettle sour thing, although i do not know how this was made, it just has a lot going on with the fermentation profile, but its cohesive and almost seems simple in its complexity, if that makes sense. not much head on it after the initial pour, a glowing light orange hazy color, but good carbonation activity in terms of the feel. light pear and white wine notes, some sour pithy thing from the quince and the bacteria together is quite unique, balanced by some nice earthy grain, wheaty to me, with some fluffy body, a little messy maybe overall, but the flavors here are nicely put together. a nice almost brine tang to the finish, no sweetness at all from the fruit, and i get neat nuance of kiwi fruit and white grape here. fun stuff, a little different, i hope to see more of their beers make it to colorado...
