an enormously expensive bottle of beer, but i was delighted to find it, and being on such a roll with these guys, i couldnt pass it up, even though my friends very vocally declared it would be a solo mission as they didnt want to share it with me, whatever, i couldnt pass it up. two years in red wine vessels, a black saison type at its base, super mature and interesting beer, thankfully not overly sour, as i was drinking this by myself. its deep brown, near black, with a fizzy and airy chestnut colored head and keeps nice ring lace as it drinks. the aroma here is really funky, deep wet earthy brett at full maturity, almost peaty in that way, awesome with the darker grains, roasty but not too intense to drink on, and leaving some space for all the oak and jammy red wine, pretty compelling aroma here. the flavor is just as good, definitely fermentation driven, with the brett being really well developed here and present all the way through. the dark grain isnt so deep, its middle of the road with some coffee, cocoa, and wood fired notes. there are some tannins here, vanilla and blackberry too, deep and lasting, really complex and mature overall. the high carbonation is kind of surprising, it keeps this oddly light for what it is, it sings like champagne on the tongue, shockingly enough. really dialed in and well refined beer, incredibly unique, and really one of the better black saison types i have ever had. these guys are really doing some special beers right now!
