Opened 5 years after its first release. Now an amber colour with some carbonation. Very much tastes like it has developed over that time. Complex mixture of tastes and flavours. Including oak, grass and some sherry like notes. Excellent

i really did not know much about these guys before i got lucky enough to have a few of their wild beers, incredibly impressive stuff, mature and old worldy and traditional to me, an operation i am awfully excited about now! its cool to have a coolship beer (pun intended) from a place like england, where i am so unfamiliar with whatever wild elements exist ambiently there. its so new to me, and i really dig that. its lambic-esque for sure, traditionally done, turbid mashed and all of that i would think, but the fermentation profile is unique. i get a little more funk than sour here, some acidic citrus but no more intense than that on the sour side, lots of barnyard funkiness, drying oak, and complexity, earthy and grassy and grainy all in nice proportion, but its not a cultured and basic brett to me, so many are similar now, but this is different, evolved and weird in a good way, i love it. the finish, especially after its warmed a bit, is lambic forward, like some of the better belgian stuff, they really have achieved near mastery here. id love to have more of this to drink, share, and cellar, but it was a joy to get to enjoy some. ill be on the lookout for more from these guys, super impressed with them in very limited experience. this is elite level wild beer!!!
