Brewed in collaboration with our friends at Jersey Cyclone, our brewers smoked a small portion of the malt with black walnut. Adding a hint of smoke to complement the herbs (sweet gale, yarrow, rosemary), the light malt backbone rounds our version of this ancient ale. And in Gruit-making tradition, some of the herbs and spices are a secret.

12 oz. pour on draught at the brewery. Served in a Willi Becher glass. It pours a cloudy, honey-amber color with a modest, ecru cap and spotty lacing. A fragrant nose - malty, herbal, and earthy with a significant amount of smoke. The taste largely follows. The rosemary, yarrow, and gale provide notes of earthy pepper and pine. The malt is smoked with black walnut which adds an additional dimension to the flavor. While there are no hops, the ale is nonetheless bitter and astringent. The mouth feel is surprisingly thick and creamy for its modest 5.2% ABV. Overall, this ale is well-crafted and Flounder and Jersey Cyclone deserve kudos for brewing this obscure style. More brewers should do so.
