Dark amber colour, clear. Ecru-coloured head, fine bubbles, very dense (creamy), high, persistent. Melts to a half-centimetre layer, swirls nicely.
The aroma is intensely malty, sweet, bread-like, grainy, with light fruity hop notes. Over time, delicate accents of dried dark fruits, raisins, and perhaps even nuts appear in the aroma.
Taste: here, there is an almost perfect balance of strong, malty sweetness and hoppy bitterness. Almost, because after all, the bitterness is the leading flavour, although its perception is definitely lower than the declared IBU 90.
The alcohol is perfectly hidden. Medium carbonation. Full-bodied, high. Creamy smooth texture (thanks to red quinoa and amaranth).
