In the Spring of 2015 we brewed an extra batch of our hoppy saison “All My Tomorrows," and immediately racked it to fresh California Chardonnay barrels along with some of our favorite strains of brettanomyces. A year later, our patience was rewarded with a bright and funky beer that has a nice touch of acidity. We felt this beer would blend well with our Louisiana mayhaws in our foeder to create a truly unique beer. To add another layer of complexity, we dry hopped this beer with a touch of Citra. The result is a nice and tart fruit forward saison with an added bit of bright but subtle funk.

A: Poured into a Duvle tulip to a slightly hazed golden orange topped by a dense finger of slightly off white head which fades slowly to a collar around the edge of the glass with minimal lacing.
S: Smells of mayhaws and stone fruits, slight tartness and a hint of funk with a touch of oak
T: Taste is fairly sour up front with notes of mayhaws and stone fruits, hints of funk but not overly funky. Huge fruit notes throughout with some nice tartness. Swallow is more mayhaws, tartness, and stone fruits. The tartness on this one lingers the longest with a little more mayhaw.
M: This beer is on the lighter side of medium in body. Carbonation is a little lower than I would like it to be but the beer doesn't taste excessively flat. The acidity gives this beer a very nice drying finish.
O: Overall this is a very nice and very impressive beer. It has great flavors and some really nice complexity that make it a very good beer to drink. Their sour beers continue to impress me.

Had it fresh, having it again! Great stuff. Clean sour, think JK or wicked weed. Can't wait to have batch 2. Thanks a ton Jerry now on to grace and grit!

375ml bottle, batch 001, poured into a stemless wine glass. Enjoyed on 8.6.16, reviewed from Tasting Journal.
The beer pours a cloudy copper color, orange hues, opaque and hazy with a nice soapy off white head, great retention and lace. The aroma is nice, dry aged hops, light funk, earthy oak and must, a bit of berry fruit, straw, pale grains, lactic but with nice balance. This beer definitely starts off pretty earthy but the mayhaw help steer it back into balance with some sweetness that plays well with the sweeter grains. The flavors offer more of the same, pretty hoppy saison base, dry dead leaves, spice, very earthy as expected but not bitter at all, berries, oak, sour citrus lead to a light grainy finish. The mouthfeel is good, smooth, medium body, a bit heavier than expected, coating, very gentle with soft carbonation and a tart finish.
Verdict: A very nice wild ale from Great Raft. This is my first experience with this brewery and hopefully not the last. Plenty of hoppy saison base is still there, but the berries definitely help to balance this beer and add a very unique flavor. I'm not sure I've knowingly had a mayhaw before this but I will certainly look to try them more often.

I'm not sure if I liked this or Come What Mayhaw more, but I'm leaning toward this brew. Even the twice used mayhaws still shine in this beer. I think all this treatment to a great beer to make it a completely different beer totally paid off. I can't wait until the next batch is released.
