We added our house culture of wild yeast and lactic acid to our tripel, Gnosis, then fermented it in peach mead barrels from our friends at Millstone American Farmhouse Cidery.

Sampled at SAVOR 2015. Nice mellow and balanced brew, with good bitter and funky taste. Not too fruity or hot.
