This modern day version of an American Table Sour was brewed with a blend of Pilsner and Pale malt as well as an abundance of wheat then rounded out with a touch of darker specialty grains. After being inoculated with Lactobacillus and allowed to acidify in our open fermenter it was then finished off with our house mixed culture of funk. Brewed as a tribute to one of our brewers dogs named Bosco, who recently passed away after battling Canine Lymphoma.

Poured on tap into a stemmed wine glass.
Dark peach body color, no head presented and quite dark orange, with an almost pink like collar given. Minor bit of carbonation and a bit of glow.
Aroma hits nice and fruity. Minimal tartness but with a bit of almost radler like sweetness. Cherry to blackberry like esters and mixing stone fruit. Touch of small malt sweetness makes a nice balance.
Palate brings some creamy peach and tangy flavors. Creamed peach with some nice soft acidity and touches of berries. Kind of almost a blueberry quality which is quite surprising. Chewy body as well. Almost getting into a doughy quality also.

On tap at the brewpub in a balloon glass. Orange, with a quickly dissipating white head. Incredibly fruity nose—so much so that it's amazing that there wasn't any fruit involved. Huge apricot aromas, followed by yeasty spice leap from the glass. The taste is dominated by tart apricot, with a breath maltiness following before a dry finish.
