Gaia's Whimsy is a blend of wheat beers fermented with Bavarian Hefeweizen, House Ale, and Kveik yeasts. We aged them for 12-15 months in freshly dumped red wine barrels on wine lees with a blend of brettanomyces and lactobacillus. The result is a lightly tart, dry and refreshing beer with just a touch of funk.

Had on tap. Cloudy yellow pour, white cap. Vinous barrel lead the nose, with wheat, brett, lacto, lemon, and stale bread. Taste has great barrel depth, so much complex oak and wine in an elevated way, big lacto, moderate bretty funk, wheat, stale bread, lemon, hints of beet, straw, and earth intertwine. This depth is especially impressive because the body is lighter but not delicate, good backbone and light wild sour nature. Nice experimental beer
