This collaboration among brewer friend from Stoup, Trap Door, Human People and Formula is sharing the good news that West Coast IPAs are NOT Dead, but indeed thriving! UNDead is a crisp, assertively hopped IPA celebrating the pine and citrus spirit of Columbus and Simcoe hops, while highlighting the fruity earthiness of Mosaic and Nectaron and tropical fruit essence of Krush. The West Coast spirit is alive!

Poured into a Seattle Beer Week glass. Pours a light to medium golden amber with a one finger white head with great retention and nice lacing. Aroma of lightly caramel malt, citrus and dank hops, distinct herbal dankness, mild orange and grapefruit and a hint of mixed tropical fruit. Flavor is pale and mildly caramel malt, dank, piney and citrus hops, herbal dankness, pine, yuzu, grapefruit and mild mixed tropical fruit; assertive hop bitterness in the finish. Medium bodied with light to moderate creaminess. Haven't had a really aggressively bitter IPA in a while and as promised, but one delivers. Considering the hop bill, I'm surprised that dankness is the dominant character with clear 420 notes. Fine West Coast pine and citrus too. The tropical fruit is subdued, but adds some interest. Holds together nicely for an IPA with 4 collaborative breweries involved. Probably a one-off, but I'd happily get it again. Indeed, the West Coast spirit is alive. Not for hazy, low IBU IPA fans.
