To celebrate our 7th Anniversary, we’ve concocted a truly special beer. VII is perhaps the most unique brew we’ve ever packaged for release, a one-time blend of several different barrel aged and specialty beers including:
46% Bourbon Barrel Pi (Pumpkin Ale)
19% Bourbon Barrel Dire Wolf (Imperial Stout)
10% Maple Barrel Dire Wolf (Imperial Stout)
7% Maple Barrel Magellan (Maple Stout)
4% Buchenrauch (Rauchbier)
3% Monk's Hood (Imperial Mocha Stout)
3% Coffee Lil' Nippert (BB Barleywine)
3% Hammer Toss (Dunkel)
2% Lil' Nippert (BB Barleywine)
2% Nippert (English Barleywine)
1% 2017 Tripel Whiskey (BB Tripel)
We conditioned VII on cacao from Ecuador and Madagascar vanilla, which adds a chocolatey sweetness that combines nicely with the pie spices and ancho chile heat contributed from our BB Pi Pumpkin Ale. The resulting beer is a nuanced, boozy treat featuring strong notes of chocolate, maple and spice.

12 ounce can, canned on OCT 08 2020. Served in a Pretentious Aromatic 2.0 beer glass (like a snifter), the beer pours dark brown with about a half inch tan cola-like head that fizzled away quickly. Pretty much no lacing at all. I like the aroma, the brew smells like bourbon, vanilla, dark fruit, pumpkin spices, maple, coffee, chocolate and some nuts. Taste is similar to the aroma, but there's also the addition of some chile peppers, oak and burnt/charred malt flavors. Decent amount of chile pepper heat, too. Mouthfeel/body is medium/full, it's a bit creamy and slick with a moderate amount of carbonation. There's a lot going on with this brew, but then not really a surprise since there's a lot of different beers blended here. Definitely worth picking up if you come across some!

From the 12 oz can in a snifter. This unique ale blend
pours a dark, shimmering, brown tinged obsidian with a
nice head of tan foam that sizzles to a thin ring with no lacing.
Nose of dark roasted coffee, dark cocoa, vinous wine notes, dark
cherry, spicy pepper notes, herbal spices (nutmeg), and light
bourbon elements with vanilla. Flavors are huge and fall in
line mostly with the nose minus some exceptions. Mellow
coffee, dark chocolate, mellow vanilla, nutmeg, cinnamon,
Merlot wine touches, bourbon, touches of oak, a cacophony
of flavors finishing with a roasted pepper note with moderate
warmth. Nice mouth feel; full body, wine like, warming booze
and spice, low carbonation, lightly slick, moderately coating, and
overall just flat out unique.
Congrats on 7 great years Wolf's Ridge!
Try it if you like your brews spicy and complex!
Cheers

12 oz can born on 10/8/20, poured into a snifter at 58 degrees F:
L - dark, but a bit translucent, little head that disappeared quickly
S - malt, bourbon, nut, cinnamon, coffee; very well balanced
T - bourbon and spice, by that I mean HEAT, cinnamon and a sweet malty flavor is in the background as well
F - minimal carbonation and medium mouthfeel. Spicy on the finish with lingering heat
O - this beer is a grand cru consisting of different styles, but the bourbon and the ancho chile dominate, I would prefer more balance among flavors in the taste, like there is in the smell
