We’ve aged our Belgian-style Tripel in Experimental Whiskey Barrels from Buffalo Trace Distillery’s R&D efforts. The beer was aged for over 26 months and has bold bourbon notes coupled with the rich flavors of honey, caramel apple, vanilla, and oak.

Context: I'm going to refrain from giving an initial rating, as my bottle leaked in transit. Not sure how good the remainder is, but the bottle was 3/4 full in a damp box. I have a replacement bottle (WR very kind), so I'll have to give a fairer rating in the future. Taking a break from the stout box to get this on the board in case it stands to lose quality over time.

So, the beer itself pours a dark, sort of muddy honey brown-yellow. Little to no head or bottle fizz, which I take as a loss of carbonation. Whiskey aroma with a backing of honey, caramel, apple, and vanilla. Taste follows, just no apparent carbonation as a result of the above. It's good. Smooth. Very refreshing and rounded once you get past the initial barrel hit on first taste. Wonder how this will be if it's aged. I think mine is a little flat at this point, but it's otherwise fine.

Unfortunately, you can't submit a review without the scores, so I'm gonna have to redo it when I get to the fresh bottle.

7/8/25 - The time has come to FINALLY get around to opening this. One of several bombers that has been chilling in the fridge.

Pours a deep amber color, bubbly with a foam cap that fades out quickly. It smells very fruity to me—raisins are a given, along with the bourbon. The flavor is very... refined. Big beers like this can be over the top in flavor, but this feels like a monkish sipper. There is a pretty noticeable note of honeyed green apple. A bit of a yeasty touch to it. A bit of spice and bourbon or brandy as well. Vanilla with a woodsy finish. The beer is pretty full and carbonated with a sweeter finish.
