fabulous pils, true to style but with enough of its own personality to be easily plucked from a crowd of these, its traditional in terms of ingredients but modern in terms of proportionality, and its super well refined and clean, flavorful but also crushable, they nailed this! unfiltered looking but still really tidy in the glass, a high inch of airy and lasting white head from the relatively tight cans, lots of bubbles in the glass, sunny toned and excited. the aroma is really fresh, but also old worldy, still with some crackery even slightly dusty in a good way german pils malt, in nice balance with these hops, which are striking not in terms of their boldness but in terms of their purity, easily one of the better expressions of this variety i have known, especially from an american brewer, freshness stands out in the aroma, its grassy and tea-like while also having a more blooming floral side, less of the spice and citrus, distinct from other noble varietals, and the lager yeast is unifying and right, intriguing and familiar at the same time. the flavor is hoppy without really being that bitter, at least comparatively speaking, the hops start earlier on than in most of these, way fresh and nuanced, things like honeysuckle, geranium, marjoram, and hay, i am tasting things from this hop that i never had before, and the bitterness does ramp up towards the swallow the point of being drying and assertive, but still not spicy. proper old world lager yeast done patiently and professionally, adds to the crispness and brisk pace of this overall, its refreshing and fast drinking for being as flavorful as it is, and again the freshness really pops, uncommon in that regard. nice minerality and water chemistry, very spirited carbonation, refreshing to me and a beer i learned something from, really exciting. this one puts lowercase on the map as far as i am concerned...
