A delicious wild ale that brings a delightful construct of saison like grains, honey, wild yeast and oak. This is a complex and sophisticated brew. Malt is firm with malted and unmalted grains giving a wheaty zip to start. The yeast takes over with a sourness that give vinous notes and delightful tartness. Oak and a bit honey. Clean dry and with a crispness that holds up over the course of a meal. Was excellent with my smoked brisket
