Starchy dry with evident overhopping. True Kolsch yeast isn't indicated by its high ester (overly fruity) yeast flavour. Not as clean drinking as a Kolsch proper ought to be, but it does nail that grape-redolent flavour many a Koelsch features.
I'd certainly prefer almost any Koln-brewed Koelsch over this, even those that have sat on shipping containers to reach the U.S. market. One can absolutely do better even just regionally within the same Oklahoma footprint...this isn't an up to par brew by any stretch of the imagination.

Appearance:
Date stamp on six pack holder: 103118 (Oct 31, 2018 assumed) Two finger frothy, rocky head that settles to permanent layer. Minimal lacing. Medium gold, Hazy due to visible floaties.
Aroma:
Crisp, bready malts and strong spicy grassy hops. Slightest hint of fruitiness/wine. Package says it has Saaz hops. That explains the spicyness.
Flavor:
Crisp, bready malts and moderate spicy grassy hops. Slightest hint of fruitiness/wine. (is there an echo in here?) Basically the flavor delivers the promise of the aroma. It sports a day-long, excessively busy, hoppy, bitter finish for the style. Much more like a Czech Pils or an APA. I've had classic Bohemian Pilsners that didn't hit this hard.
Mouthfeel:
Light to Moderate Mouthfeel. On the heavy side for style. No astringency and the CO2 is nominal.
Overall:
Before I lay down the law I must confess that I really LOVE this beer. I love Saaz hops and the beer styles that showcase them. I thoroughly enjoyed drinking this beer and highly recommend this beer to those who like this kind of beer. That being said, I am obligated to say this: I call Kölsch appellation abuse. You set our for Köln and ended up in the suburbs of Plzen! I don't care what yeast strain you used or what temperature you did the primary ferment... this is not a Kölsch! This is a beer that delivers on some style parameters and egregiously deviates from others. It barely passes the taste and aroma test for the fruit/grape/wine character. Overshoots the bitterness and hop flavor/aroma and the choice of Saaz is not optimal for style. I would finish with Tettnang or Hallertauer and dial it back to at or below 20 IBUs. The label says it is at 27 IBUs which is high for a Kölsch, Tastes far north of that to me. It lands closer to a German or Czech Pils than a Kölsch. Also the haze needs to go. Filter or fine before canning. To complete this feedback sandwich I must say it was very tasty and enjoyable overall, regardless of aesthetics and style conformity.
